Course Description
In this course biological, physiological, sociological, and environmental aspects of nutrition related to human growth and development are studied. Emphasis is on normal nutritional needs during the prenatal phase and during early childhood and adolescent years.
Course Objectives
The purpose of this course is to acquaint you with normal growth and development during pregnancy, infancy, childhood, and adolescence. We will begin by studying the influence of genetics and the impact of nutrition on the outcome of pregnancy. We will look at preconception and fetal life from a physiologic and nutritional perspective. Throughout the remainder of the course we will be viewing life from childhood through adolescence, in terms of both growth and development while considering the nutritional input needed to optimize each stage of life.
At the completion of this course the student will be able to:
- Summarize the effects of genetic, biological, environmental and socioeconomic factors on the outcome of pregnancy.
- Identify the role of nutrition and nutrient needs prior to conception and during pregnancy and lactation.
- Describe the appropriate recommendations for conditions associated with pregnancy, such as heartburn, constipation, nausea and vomiting, pica, and cravings.
- Describe the reasons for increased risk of poor outcome associated with pregnancy in adolescence and in situations where substance abuse is a factor.
- Utilize appropriate techniques to evaluate growth of infants and children.
- Identify the stages of growth and development from birth through age 12 and be able to apply this knowledge to meet the nutritional needs of infants and children.
- Discuss the behavioral, social, intellectual, and language development that occurs from birth to 2 ½ years of age.
- Describe the effects of hunger, malnutrition, and anemia on physical and mental development.
- Describe the challenges of conducting research in the area of nutrition and behavior.
- Identify the changes that take place physiologically during adolescence and utilize this information to identify nutrition needs for teenagers.
- Describe how social, environmental, and physiological factors affect the growth and development of children and adolescents.
- Identify nutrition programs that can impact the growth and development of children and adolescents.
