Course Description
This course is designed for students that are not nutrition majors. The goal of the course is for students to understand that their knowledge of nutrition will allow them to evaluate and personalize nutrition information. This course brings nutrition down to a personal level. The overall emphasis is the importance of understanding one’s food choices and modifying one’s diet to best meet personal needs. Topics are explained in a simple straightforward manner and go beyond basic nutrition to include topics such ethnic diets, eating disorders, supplements, alternative therapies, vegetarian diets, diets for athletes, and fad diets. The emphasis of understanding one’s personal dietary needs includes a fun final project, in which students analyze their own diets and areas in which they can improve for long term healthy food choices.
